First of all, decaf coffee is made from the same beans as regular coffee. The difference is that before roasting, most of the caffeine is carefully removed using one of several decaffeination processes.

What is Decaf Coffee?

Decaf coffee is made from real coffee beans that have had most of their caffeine removed before roasting. This means that decaf coffee does still contain caffeine, just not much. 

Typically, around 97 to 99.9% of the caffeine is extracted, leaving behind the natural oils, acids and flavour compounds that give coffee its aroma and taste. This means decaf still has the sweetness and flavour as normal coffee, but without the strong stimulant effect.

Because the beans are decaffeinated before roasting, they can be roasted and brewed in exactly the same way as standard coffee. Decaf is suitable for everything from filter coffee and cafetières to bean-to-cup machines and espresso.

People choose decaf for many reasons – to reduce caffeine intake, avoid sleep disruption, manage sensitivity to caffeine, or enjoy coffee later in the day without the jitters. It’s also a popular choice during pregnancy or for those advised to limit caffeine, while still wanting the comfort and ritual of a proper cup of coffee.

So decaf coffee comes from real coffee beans – not a different type of bean or a synthetic alternative. It starts as the same Arabica or Robusta coffee used for regular brews, but goes through an additional decaffeination process at the unroasted stage.

4 Main Decaffeination Methods

Now you know what decaffeinated coffee is, let’s explore some of the main methods of decaffeinating coffee beans: 

 

1 - Swiss Water Process

The Swiss Water Process is a chemical-free method that uses only water, temperature and time.

The green beans are soaked in hot water to dissolve caffeine and flavour compounds. The water is then passed through a carbon filter that traps only the caffeine molecules. The flavour-rich water (now caffeine-free) is reused to soak a fresh batch of beans, allowing caffeine to be removed while preserving taste.

This is a popular decaffeination method because: 

  • There are no chemical solvents

  • It offers a clean and balanced flavour

Note – This is commonly used in specialty decaf!


2 - CO₂ (Carbon Dioxide) Method

The CO₂ method uses pressurised liquid carbon dioxide to remove caffeine. Unprocessed coffee beans are moistened and placed in a sealed chamber. Liquid CO₂ is circulated through the beans, binding to caffeine molecules and extracting them. The caffeine is then separated from the CO₂, which is reused in a closed loop.

This is a popular decaffeination method because:

  • It targets caffeine specifically without removing flavour compounds

  • It preserves the bean’s original taste and aroma

Note – This is a common choice for high-quality commercial decaf!


3 - Solvent-Based Methods (Ethyl Acetate or Methylene Chloride)

This method uses an organic solvent to remove caffeine from the beans. The beans are first steamed to open their pores, then washed with a solvent that binds with caffeine. After the caffeine is removed, the beans are steamed again to ensure no solvent residue remains, then dried and roasted.

Ethyl acetate – Can be naturally derived from fruit and is sometimes marketed as “naturally decaffeinated.” 

Methylene chloride – A synthetic solvent, but trace amounts are removed during processing to safe levels.

Solvent-based methods are popular because:

  • They are efficient and cost-effective

  • They retain good sweetness and body

Note – Like the Carbon Dioxide method, solvent methods are often used in commercial production.


4 - Sugarcane or “Natural” Solvent Methods

This is a newer, environmentally friendly method that uses ethanol derived from sugarcane to remove caffeine.

It works similarly to other solvent methods; however, it relies on a natural, renewable source instead of synthetic chemicals. 

It’s popular because: 

  • It’s eco-friendly and sustainable

  • It can preserve delicate flavours

  • It appeals to conscious consumers

 

Does The Decaffeination Method Affect Taste?

Absolutely – the method used can change the flavour, aroma, and body of your coffee. Here’s what to expect from each method:

Swiss Water Clean, slightly softer acidity
CO₂ (Carbon Dioxide) Retains most original flavours, rich and aromatic
Solvent-Based (Ethyl Acetate / Methylene Chloride) Slightly fuller body, sweetness retained
Sugarcane (Ethanol-Based / Natural) Smooth, delicate, eco-conscious profile


Note: Roast profile and bean freshness also influence taste, so high-quality decaf can be just as enjoyable as regular coffee.
