Chemex Brewing Guide

The Chemex allows you to brew high-quality coffee using the pour-over method. When brewing coffee, we believe it should be a straightforward process, which is why we are providing you with a guide on how to brew your coffee using a Chemex.

  1. Use a medium-coarse grind for your coffee so the coffee doesn’t clog the filter
  2. When you boil the water, let it sit for one minute before pouring

 

How to Brew Coffee Using a Chemex

Brewing Chemex coffee is quick and easy and takes around 3-5 minutes when you know what to do. If you’re unsure, here is a step-by-step guide for you to follow:

 

Equipment Needed

  • 3 cup Chemex
  • Filters
  • Timer
  • Grinder (preferably a burr grinder)
  • Scales
Brew Variable Details
Grind Medium-coarse – like coarse sea salt
Dose 30g of coffee
Final Cup 500ml

 

Step 1-Make sure you have the right equipment

Step 2-Boil your kettle. Ideally, to 94 °C, but if you don't have a temperature-controlled kettle, just let it boil, then sit for a few minutes. This temperature allows for better extraction.

Step 3- Place your Chemex on your scales and put your Chemex filter in the brewer with the thick side facing the spout.

Step 4-Wet the paper by pouring a bit of hot water on it, which gets rid of the papery taste.

Step 5-Discard the water that is now in the Chemex and place it back onto the scales.

Step 6-Tare your scales.

Step 7- Pour your ground coffee into the Chemex.

Step 8- Tare your scales and start the timer.

Step 9- Bloom: Pour 60ml of water into the coffee bed to start the bloom. The water will start to extract the aromatics and coffee oils.

Step 10-Stir gently.

Step 11-Wait until the timer on your scale reads 0:50.

Step 12- Pour water in a circular motion until the scale reads 300ml.

Step 13- When your scale reads 1:30, continue pouring slowly up to 500ml in total. Focus on even saturation.

Step 14-When your scale reads 2:30, stop pouring and let the coffee draw down.

Step 15-Wait for the brew to finish dripping through.

Step 16-Remove the filter and pour the coffee into your preheated cup.

Step 17-Enjoy your brew!

DO I NEED TO WET THE FILTER BEFORE STARTING THE BREWING PROCESS?

No, this isn’t a requirement; however, it’s a good way to preheat the carafe and remove any paper fibres. Make sure to remove the water before starting the brewing process.
