What Is Peaberry Coffee?

A peaberry is a natural mutation that occurs in about 5 - 10% of all coffee cherries. Typically, a cherry produces two flat-sided seeds (what we know as coffee beans), but in the case of a peaberry, only one rounder, denser bean forms. This small, oval-shaped bean is a bit of a genetic twist, just one seed developing instead of two.

Because of its compact shape and density, many roasters find peaberries roast more evenly, resulting in a cup that's often described as brighter, sweeter, and more vibrant. While taste can vary depending on origin and roast, peaberries are generally prized for their distinctive and concentrated flavour profiles.

Founded by Paulo Ribeiro Maciel, Água Santa is a second-generation family farm located in the Alta Mogiana region of Brazil. Paulo’s connection to agriculture runs deep, his maternal grandfather was a grain producer, and his paternal grandfather was one of the earliest agricultural engineers to graduate from the prestigious Luiz de Queiroz College of Agriculture (ESALQ/USP) in the early 1900s.

Since 1994, Fazenda Água Santa has been known for producing high-quality coffees with consistently high yields. The farm is Rainforest Alliance certified, a member of the Alta Mogiana Specialty Coffee Producer Association, and constantly renews its plantations to maintain sustainable practices and exceptional flavour.
