Our Colombian Rainbow is grown from Castillo, Caturra, and Colombia trees planted at an altitude of 1,200 and 2,000 m.a.s.l. The best cherries were picked, de-pulped and fermented in tanks for 12 - 24 hours. The cherries were then dried in a two-stage process, where firstly the beans were put out on raised beds during an average period of 10 to 15 days to later finish reducing the moisture on a mechanical dryer for 36 to 38 hours.
This coffee has undergone a sugarcane E.A decaffeination process. This is a natural process that not only maintains astonishing integrity of green coffee flavour but also allows us to offer decaffeinated coffee that follows an integrated vertical supply chain as the growing, processing and even the full decaffeination process all happens at the source in Colombia.
