This year we sourced our Christmas coffee from the village of Planes in the La Paz department of Honduras. Grown by Alex Ramon Ponce Rodriguez, who has been producing coffee since 2014 with the help of his father. Alex had learnt a lot about coffee throughout his childhood and is a typical example of what coffee means in the Marcala coffee region. Like other children, he grew coffee with his father from a young age but did not start to grow on his own until he was ready. 

This lot is a honey process, which means the cherries are picked carefully when are ripe and are de-pulped the same day; then, the parchment is put directly on raised beds for around 22 days to dry, the parchment with the mucilage is raked every 30 minutes using wood sticks, during this drying the cherries are sorted by hand to remove defective beans. This careful process ensures a clean cup with beautiful sweetness and complex characteristics. 

Expect lots of chocolate aromas and notes with a sticky stewed date finish and gooseberry sweetness.
